Ingredients
For the beef patty:
- 1kg beef mince
- 1 small brown onion, finely chopped
- 2 garlic cloves, finely chopped
- small handful parsley, chopped
- 1 large egg, separated
- 2 tsp Dijon mustard
- 1 tbsp Worcestershire sauce
To serve:
- 1 tbsp olive oil
- 200g good melting cheese (such as Cheddar, Gruyère or Taleggio) sliced
- 8 burger buns
- 4 tbsp mayonnaise or garlic aioli
- avocado, tomato and red onion, sliced
- lettuce leaves

- Place all the beef patty ingredients into a bowl. Season and mix well. Cover and chill in the fridge for 1 hour.
- Shape the mixture into 6 – 8 burgers, wetting hands to stop the mixture sticking.
- Heat a large pan or barbecue to medium-high heat. Brush both sides of the burgers with olive oil and cook for 3-4 minutes each side or until well browned and cooked through.
- Meanwhile, preheat the grill to medium hot. Top each burger patty with a slice of cheese and grill for 2 minutes until bubbling.
- Whilst the cheese is melting, toast the burger buns until lightly golden.
- Spread the mayonnaise or garlic aioli over the base of each bun.
- Add the beef patty on the bottom bun, then top with tomato, lettuce and avocado slices and red onion.
- Serve with home-made baked sweet potato wedges.
