Ingredients

For the beef patty:

  • 1kg beef mince
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • small handful parsley, chopped
  • 1 large egg, separated
  • 2 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce

To serve:

  • 1 tbsp olive oil
  • 200g good melting cheese (such as Cheddar, Gruyère or Taleggio) sliced
  • 8 burger buns
  • 4 tbsp mayonnaise or garlic aioli
  • avocado, tomato and red onion, sliced
  • lettuce leaves

directions

  • Place all the beef patty ingredients into a bowl. Season and mix well. Cover and chill in the fridge for 1 hour.
  • Shape the mixture into 6 – 8 burgers, wetting hands to stop the mixture sticking.
  • Heat a large pan or barbecue to medium-high heat. Brush both sides of the burgers with olive oil and cook for 3-4 minutes each side or until well browned and cooked through.
  • Meanwhile, preheat the grill to medium hot. Top each burger patty with a slice of cheese and grill for 2 minutes until bubbling.
  • Whilst the cheese is melting, toast the burger buns until lightly golden.
  • Spread the mayonnaise or garlic aioli over the base of each bun.
  • Add the beef patty on the bottom bun, then top with tomato, lettuce and avocado slices and red onion.
  • Serve with home-made baked sweet potato wedges.
